Pumpkins Protein Muffins

It is fall time and I am sure that you are noticing that pumpkin flavor everything is everywhere!  Here is my contribution, it is my adaptation of a Fitness RX article by Jamie Baird.  It is super easy, because that is just how I roll, if it has too many ingredients I wont even attempt.  This is something that is good for prep right up until show week!  It is a great treat!

Yields 12 muffins - 

3 are a serving 

1 cup of canned pumpkin (not the pie filling) 

1 1/3 cup of Liquid Eggs Whites

6 scoops of Eat the Bear Cinnamon Bun Protein Powder  

2 tsp of Baking Powder

1/4 cup of Coconut Flour  

Pumpking pie spice to taste if you don't have Cinnamon Bun Protein (see link below)

Mix all the ingredients together then pour evenly in grease muffin tin (grease with Pam or Coconut Oil)

Bake at 350 for 10 min, they will be firm but not done, turn over and bake for another 3-5 minutes.  Be careful not to over bake, protein burns easily.
